The appreciation they showed for Greek products, the unquestioned belief of their quality and the enthusiasm for their taste, were always proud moments for us and made us believe even more in the potentiality of our country.

Fleur de Sel 100gr

Fleur de Sel 100gr

Higher quality salt from the salt marshes of Mesologgi.

A premium product, 100% natural, unrefined salt, from the marshes of Mesologgi. It is considered to be the "caviar" of the sea, available in very limited quantities.

Collected by hand from the top of the fresh salt and dried in the sun. As it is packed unprocessed without any purification or addition of chemicals, it preserves all its natural characteristics.

The finer crystals compared to regular sea salt allow the grains to dissolve rapidly. The flavour is more delicate than table salt, contributing other minerals and tastes to the dish. Fleur de Sel is traditionally used as a finishing salt–meaning that you don’t cook with it, but sprinkle it on food just before eating.

Pasteli 65gr

Pasteli 65gr

"Pasteli", the mere mention of the word will bring a smile to any Greek’s face. For the ancient Greeks, these crispy sesame seed bars, were their original power bars.

Pasteli is easy to make and keeps for long periods. It is also a very nutritious and fast-friendly or vegan snack. This mostly ancient Greek food item, is a very popular treat for children in our modern era, and will likely continue to be enjoyed by all age groups for many more generations to come.

It is one of my most cherished childhood memories of travel to and from Greece.

Pistachio Nut Tart

Pistachio Nut Tart

Tart with Goat Cheese , Yogurt, Thyme Honey and Base with Pistachio nuts.

For one tart 28 cm diameter

Ingredients:

for the basis of tart

70gr  Aegina pistachios nuts shelled, plus extra for topping the tart

115gr soft unsalted butter

115gr  sugar

½ tsp almond extract

½ tsp salt

180gr white flour

for the filling of tart

310gr soft goat cheese

500gr Strained yogurt

2 tablespoons lime juice, freshly squeezed

2 teaspoons lime zest

80gr powdered sugar

120gr honey

Directions:

for the basis of tart

In a small food processor , mix the pistachios and chop (it’s ok if some larger pieces remain) . Do not overdone it because we don’t want to extract  their oils.
Put in a large bowl the butter with the sugar and mix them in a medium speed for about 1 minute until the mixture gets a Whitey color. Add the pistachios, the almond extract and the salt and mix again at medium speed. Then Add the flour on low speed. The mix will be quite crumbly but once you spread into the tart will unite perfectly.

Place the mix into the tart pan and using the bottom of a glass, apply the paste to its base and sides. Roll out the mix as evenly as possible. Put the tart pan in the refrigerator for 30 minutes.

Preheat your oven to 150⁰C degrees.
Make little wholes in the base in several places with a fork. Place it on the middle rack of the oven and bake for 40-45 minutes, until the base gets a slightly golden color. When it is ready, let it cool completely.

for the filling of tart

Mix in a large bowl the goat cheese, the yogurt , the juice and lime zest on a medium speed until combined. Add the powdered sugar on medium speed until you have a soft, fluffy and homogeneous mixture.

Place the filling into the baked and cold base and put the form in the refrigerator for 2 hours.

Shortly before serving the tart, put the honey in a small pot and heat it on a medium heat. Then pour it on the tart and let it stand for a couple of minutes. Sprinkle the tart with chopped pistachio nuts, cut the pie into pieces and serve!

Ingredients:

1 sheet puff pastry

Olive tapenade100g

Directions:

We open the pastry and roll it out. It’s smaller side should be in front of us.

We spread the olive tapenade evenly on the half of the pastry.
We fold the remaining half sheet and join well.

With the pizza roller tool, we slice the pastry in narrow strips about 1 cm (out 12 slices ).

We press with our finger the edges.

We place in the bottom of the pan a nonstick baking paper.

Then turn each strip (with our hands in the air and carefully place it in the pan)

We bake in a preheated oven at 180 ⁰C degrees for about 20-30 minutes.

Caramel Toffee with fleur de sel

Caramel Toffee with fleur de sel

A ★surprise★ recipe
Caramel Toffee with fleur de sel

Ingredients:

5 tbsp butter (71gr.)

1 cup sour cream

¼ cup whiskey (60ml)

1 tsp vanilla extract

¼ tsp fleur de sel

1 & ½ cup sugar (337gr)

¼ cup glucose

¼ cup water

1 tbsp fleur de sel  (for the toping in the end)

Directions:

We place in the bottom of the 23 × 23cm pan a nonstick baking paper (we cut a bigger slice and let the paper hang in the  sideways of the pan. We spread with oil well.
In a smaller  pot  we heat the butter with the sour cream, the whiskey, the vanilla and the ¼ tsp fleur de sel, stirring frequently. We remove from heat and set it aside.
In a medium / large pot ( it is good to be high because the mixture will begin to boil vigorously at some point ) ,at medium - high temperature we add the sugar, the  glucose and the water without stirring and let them boil until the sugar get a light golden color.

When the mixture reaches 154 ⁰ C, we add the sour cream mixture (carefully because the mixture will begin to boil) , stirring with a whisk until the thermometer reaches 120 ⁰ C.
We place the caramel into the pan that we have prepare and leave to cool for 10 minutes. Sprinkle with fleur de sel and let cool completely.

With a knife we cut the Caramel Toffee into cubes ( if the knife sticks while we cut it, we can put some oil into the knife). We wrap optionally the small cube pieces with a nonstick paper by turning the two ends , and is ready for a treat!
